The Baja Blues is December 26th Drink of the Day!!
This is a Shaun The Bartender exclusive. I made this as one of the signature drinks for Jilly’s Music Room in Akron, Ohio. A nice combination of sweet, sour, and citrus, to go along with the main ingredient - gold tequila. Once you get down how to make this beverage, this may surpass the margarita as your favorite cocktail made using this spirit.
I am a true believer that to enhance the main ingredient, you must work with its flavor and not try to mask it. There are way too many cocktails out there that try to hide the characteristics of the liquor. Working with what you have and building from it will give you an interesting combination that works well with your taste buds. Why would it matter what the main ingredient is when it’s not part of the taste in the first place? With that said, in this drink you can taste the flavor of the tequila at the beginning, followed by a nice salty/sour note, then ending with a sweet/citrus finish to complement the overall drink.
They say to never trust a cover when choosing a book to read. The attractiveness of this beverage and its blueish-green hue (the cover) is not as inviting as the combination of flavors that will be dancing around in your mouth when you find yourself enjoying the first sip. Baja Blues
1 1/2 oz. Tequila Gold
1/2 oz. Blue Curacao
3/4 oz. Cointreau
2 oz. - 3 oz. Pineapple Juice
Juice of one Lime
Juice of one Lemon
Kosher Salt for the rim of the finish glass
Lime/Maraschino Cherry/Lemon “Flag” for garnish
Method: In a mixing glass with ice, pour in the measured amounts of the first three ingredients. Squeeze in the juice of one lime and one lemon. Pour about 2 - 3 oz. of Pineapple Juice. Cap with a tin and shake well. The finish glass will be a tulip glass. Rub a lime wedge around the rim to wet. Dip the rim into a saucer with kosher salt, giving you a rim of salt. Carefully add ice to the tulip glass, so not to disrupt the salt. Strain the contents of the mixing glass to the finish glass. For garnish place a lime wedge, maraschino cherry, and lemon wedge on a garnish sword to make a flag and place it on top of the drink.
