Happy May Day everyone!

Spring is finally showing itself, with the buds becoming leaves on the trees, the birds singing more happily, the frogs bellowing their majestic horn sound in the background in the evening. Nothing beats the smell of just-cut grass and the way the dew’s shine dances off of it at dawn. Yes, it has finally arrived!!

Another thing that will be in abundance in the coming months is the fresh honey that you can obtain at any farmer’s market. If you are buying store-stocked stuff this time of year, you need to wake up! Freshness is the way to go when having some in stock. This is what makes this cocktail a perfect candidate for the Drink of the Day!

Put away the pies, cookies, and cakes. This is the perfect ending to any meal and will complete you. A nice relaxer after breaking bread with friends. Hope you enjoy!

 

Bee’s Knees Cocktail

1 1/2 oz. White Rum

3/4 oz. Honey Syrup (when making this, I usually go one part honey to four parts hot water. Stir well. Once it gets to room temperature, store in the refrigerator).

1 oz. Heavy Whipping Cream

 

Method: In a mixing glass filled with ice, pour in all the ingredients to measure. Cap off with a shaker tin and shake well. Strain carefully into a champagne flute.
