The Chancellor Cocktail is April 17th Drink of the Day!!

Tawny port is becoming a favorite mixer of mine of late, especially with cocktails whose base is whiskey. This ingredient complements whiskey, no matter what kind, very well. Buy itself, I am kind of skeptical about it. Way too thick for me. I am not much of a port or sherry drinker anyway, so I am not going to judge its attributes on its own. However, assisting in completing a cocktail and adding to the flavor of everything that is sharing the glass….well, that’s a different story altogether.

The Drink of the Day is a scotch based cocktail that holds up nicely with the addition to the tawny port. This is a dry scotch Manhattan with port. I will say this - If you are a scotch Manhattan drinker and would like to tone down on the sweetness and not take it all the way out of the equation, I highly recommend you give this a go. It will change the mind of many skeptics who say one should not add any foreign elements to scotch other than ice and water. After this, you will beg to differ.

Chancellor

2 oz. Scotch Whiskey

3/4 oz. Dry Vermouth

3/4 oz. Tawny Port

2 Dashes of Peychaud’s Bitters

Method: In a mixing glass filled halfway with ice, pour in the ingredients to measure. Stir ingredients well. Strain into a cocktail glass. Take a lemon peel and twist it over the cocktail, allowing for the oils from the rind to disperse onto the cocktail. Rub gently on the rim of the glass before dropping it into the cocktail.
