Drink of the Day: Holiday Egg Nog
We are here, the beginning of the holiday week. Amazing how fast this year has gone. A lot of things to do yet before Thursday gets here. Today, I am getting one of these checked off the list. I will be showing you how to make eggnog from scratch.
There is a lot of work involved in making your own eggnog for the holidays. Getting all the ingredients together, building a base for the eggnog, and heating it to get rid of any chances of salmonella, can take you to about an hours worth of work. In fact, most of you will go the route of getting eggnog from the store and skip this altogether. However, for those willing to put the time in, you will not be dissatisfied with the results. This WILL be the best eggnog you have ever had. The work and time you put into it will all be worthwhile once you take your first sip.
The best way to get an idea on how to get started on this is to watch the video I made on preparing this. However, I will have everything here for you to print up, so you have it on paper. Good luck!

4 Cups Milk
5 Cloves
2 1/2 Teaspoons Vanilla Extract
1 Teaspoon Nutmeg
1 1/2 Cups Granulated Sugar
4 Cups Light Cream
1 Teaspoon Cinnamon
12 Egg Yolks
2 1/2 Cups Spiced Rum (optional)
Method:
1. In a good sized pot, begin heating up the four cups of milk along with the 5 cloves, 1 tsp. cinnamon, and a half a teaspoon of vanilla extract, (in case you were wondering, the rest of the vanilla extract will be used later). Make sure to not bring this to a boil, keeping at low heat and stir to keep the heat uniform.
2. In another prep bowl, place the twelve egg yolks and 1 1/2 cups of granulated sugar. Stir until you get a uniformed mixture. Add this to the pot with the milk mixture. Constantly stir and simmer, again never bringing the fluid to a boil. Within five - seven minutes, you should be able to reach a temperature of 160 degrees F. Take off the stove and let cool for a couple minutes.
3. Take the mixture and strain it into the serving bowl using a mesh strainer or cheese cloth to catch any egg that unintentionally cooked and to also catch the cloves. Be patient. This step takes some time.
4. Add 4 cups light cream, 2 tsps. Vanilla Extract, and 1/2 tsp. Nutmeg to the serving bowl. Stir until you have a nice mixture.
5. Up until now, you have a nice and hearty non-alcohol beverage. If you want an alcohol-based beverage add and stir in the 2 1/2 cups of Spiced Rum.
This recipe makes ten - twelve servings.
