Drink of the Day: The Honeycomb

Bringing Absinthe back into the fold has really been a great thing for all of us bartenders out there. Just a little bit can change the character of a cocktail and open the door to a brand new experience in creating cocktails. Plus, there are many drinks already out there, such as this Drink of the Day, where there is no substitute to the real thing.

Absinthe was illegal in the United States until just a few years ago. Now that they have allowed this herbal liqueur back, you can really see what the difference is in comparison to the substitutes that are in the market. Many feel that the flavor is no different and, honestly, it may all be in my head. But, it does seem to give the cocktail a little more character.

This is a gin based beverage that uses the absinthe more for its aromatic than for its flavor. This compliments the gin well, bringing a whole new level to the experience. A well rounded mixed drink that is a perfect aperitif during cocktail hour, or can be a nice sipper while hobnobbing it with friends.

Honeycomb

1/2 oz. Absinthe

2 oz. Gin

1/2 oz. Honey Syrup

Juice of 1/2 Lemon

 

Method: Take the absinthe and pour it into a cocktail glass. Swirl it out, layering the inside of the finished glass. Set it to the side. In a mixing glass filled with ice, pour in the measured amounts of gin and honey syrup. Squeeze in the juice of half a lemon, discarding the remnants of the lemon after doing so. Spin the glass to chill the ingredients. Strain the contents into the layered cocktail glass. Take a lemon rind and twist it over the drink. Rub it gently on the rim of the glass before dropping it into the cocktail.
