Drink of the Day: Honeycomb Cocktail

T. G. I. F.!!! The kickoff to Superbowl weekend is here. To some, the party starts tonight. Here’s another cocktail to add to the dance card.

I have got a treat for you gin imbibers out there. The name of this gives away one of the ingredients. A combination of honey with citrus, then adding the aroma notes of absinthe, this is sure to be a hit at your party this weekend. Honey syrup is a great replacement for simple syrup any time, giving you a healthier substitute for the usual simple syrup. Plus, it tends to blend in nicely with ingredients, giving you bolder flavors in your cocktails. This drink is no exception to that.

Honeycomb

Absinthe

2 oz. Gin

1 oz. Honey Syrup

Juice of Half a Lemon

 

Method: To start, take the cocktail glass that you will be using as your finish glass and pour in enough absinthe to layer the inner part of the glass. Set the glass to the side. In a mixing glass filled with ice, add the gin and honey syrup to measure. Squeeze in the juice from half a lemon. Take the glass and stir the contents until cold. Set the glass off to the side. Take the cocktail glass with the absinthe and roll the glass, allowing the absinthe to layer all parts of the inside of it. Dump out the excess absinthe. Strain contents of mixing glass into the layered cocktail glass. Take a peel from a lemon and twist it over the cocktail, allowing the oils from the rind to permeate the drink. Rub the twist gently on the rim before dropping it into the cocktail.
