Drink of the Day: Pineapple Upside Down Cake

Many will remember this as a shooter. But, there’s nothing wrong with making this a tasty sipper to finish off a nice meal. This is dessert in a glass, with the sweetness of pineapple and grenadine, not to mention the Licor 43. In fact, it is so sweet that I dilute mine down with vodka to smooth it out a little. Plus, it gives you an added kick to go along with it’s flavor.

Hope you all have a wonderful Saturday. How can you not, knowing that you still have two more days off after today? Enjoy this easy to make beverage, and have a couple for me, since I will be busy serving up the cocktails this weekend and not imbibing them.

 

Pineapple Upside Down Cake

1 oz. Vodka

1/2 oz. Licor 43

Pineapple Juice

Splash of Grenadine

 

Method: Build this in an old fashioned glass by pouring in the first two ingredients to measure. Pour in the pineapple to about 1/2 inch from the rim of the glass. Add a splash of Grenadine. Stir and serve.
