Drink of the Day: Sazerac
Before getting started today, it is very important that we take a moment to thank those men and women out there who have sacrificed their own lives and freedoms so that we can all be safe and live the way we want to. God bless all of you who have given up so much to ensure we have our freedoms. Happy Veteran’s Day!! Let’s not forget why we are here and why we are free. Never allow anyone, including those who are making decisions in our government, to take away those freedoms from us. These people in the military are fighting for their families and for us. Honor them by remembering what they are fighting for. Even if you don’t agree with war, they are doing what they do so we have that opinion. Don’t forget that. A toast in remembrance for all those who have been our security through the many battles we have endured through the history of the United States.

Now, for the Drink of the Day….
This is probably the oldest cocktail made to this day. It was originally made with Sazerac Brandy back when New Orleans was just a French fur trading center and gets its name from the brand itself. Now, this Drink of the Day is known as a rye whiskey cocktail, still prominent in this region. In fact, just like the Pat O’Brian Hurricane, you have to have yourself a Sazerac whenever you are in this fine city.
I was very excited when we were finally able to make one of these using absinthe when the United States lifted the ban on this fine liqueur. Though Pernod is a fine substitute, it’s always best to be able to use original ingredients when making one of these. When done properly, the absinthe does a fine job in taking the bite out of the rye and bringing out it’s attributes. The bitters, sugar, and twist of lemon are a nice finishing touch, giving you a cocktail that you can enjoy up, like the version I show in the video or, if you want your cocktail cold, on the rocks. I will say that the ice tends to get in the way with the overall effect. If you do want to chill it, I recommend only using a large cube or puck of ice so you are not hindering the absinthe-layered glass too much.

2 oz. Rye Whiskey
2 - 3 Dashes of Peychaud’s Bitters
1/2 oz. Simple Syrup
Absinthe
Lemon Rind
Method: Take an old fashioned glass and put ice and water in to chill it and set it off to the side. This will be the finish glass. In another old fashioned glass, place the first three ingredients in to measure. Using a bar spoon, stir it to blend these ingredients. Take the finished glass and dump out the ice and water. Pour enough absinthe in to layer the inner part of the glass. Swirl the absinthe in the glass, being sure to layer the whole inner part of the finished glass. Dump out the excess. Take the other glass with the other ingredients and pour it into the finished glass. Take a lemon rind and twist it over the cocktail, allowing the oils from the rind disperse onto the drink. Rub it gently on the rim before dropping it into the beverage.
