Drink of the Day: Faye O’Rourke
To keep going with the St. Patrick’s Day theme, here is a cocktail that I came up with for the lead vocalist of a Dublin-based rock band.
I was working at a hotel bar and was having quite a slow night, when these four young people came walking in. We started talking and, come to find out, they were in the middle of a United States tour. They had just got done with doing the Jimmy Fallon Show and were on their way down to Columbus, Ohio. They stopped for the night at the hotel to wind down and to enjoy some fine cocktails.
In the middle of talking with them, I found out that their lead vocalist, Faye O’Rourke, was going to be celebrating her birthday and wanted to find a drink that would fit her tastes. After a couple of tries, I came up with this.
This is a very tasty beverage, one that combines various liqueurs to come up with a nice sipper. Don’t let the ease of going down fool you. Enjoy sipping this to savor every flavor this has to offer.
With a name like this, I thought this would be a great drink to share for the season. Hope you enjoy it as much as Faye did.

Faye O’Rourke
1 oz. White Rum
1/2 oz. Peach Schnapps
1/2 oz. Coffee Liqueur
1/2 oz. Raspberry Liqueur
1 oz. Orange Juice
Method: Combine all ingredients into a mixing glass will ice. Cap and shake well. Strain into a highball glass filled with ice. Garnish with a lime and orange wedge on the rim of the glass.
