Drink of the Day: The Honeycomb
I hope everyone is having a nice and relaxing Sunday. For those who are, and those of you who need a little help doing so, here’s a cocktail that I’m sure will put you in the right frame of mind.
For those of you who like their gin, this is a great cocktail to not only taste the many things your spirit has to offer, but also to heighten the flavor with some aromatic properties that all of your senses can enjoy. Absinthe and honey work well in rounding out the gin and giving you a balance that wakes you up. Adding the lemon only enhances the aroma.
You will be amazed on how simple this cocktail is to make; especially when you lift the glass to your lips for the first time and experience the many layers of enjoyment it has to offer while imbibing. What a perfect Sunday relaxer!

Absinthe
2 oz. Gin
1/2 oz. Honey Syrup
Juice of 1/2 Lemon
Method: First pour enough absinthe in a cocktail glass to layer the inside of the glass nicely. Set the cocktail glass off to the side. Pour the other ingredients to measure in a mixing glass with ice. Stir the contents of the mixing glass to get a good blend. Set the mixing glass off to the side. Take the cocktail glass with absinthe and swirl it to layer the entire inside of the glass, dumping out what’s left of the absinthe into the sink. Strain the contents of the mixing glass into the absinthe layered cocktail glass. Take a lemon rind and twist it over the cocktail. Rub the twist gently on the rim of the cocktail glass before dropping it into the cocktail.
