The Faye O’Rourke is March 11th Drink of the Day!!

About a year ago, I had the pleasure of meeting a young, upcoming band from Dublin, Ireland, who were just passing through town on their way from New York City where they played on the Jimmy Fallon Late Night Show. The name of the band is “Little Green Cars”, (I will be introducing the drink I came up for them in the coming days), and their lead vocalists name is Faye O’Rourke. She was about one week away from hitting the big birthday, where she would be turning 21. She asked if I could make her a signature drink, so she could enjoy something with her family when she got back to Dublin. This is what I came up with.

This is drink two of five in the build up to St. Patrick’s Day weekend. A very sweet cocktail with a coffee and fruit background, a perfect beverage for those not used to drinking liquor straight. Just so you keep in mind that this is a very potent drink and to take your time drinking them, you will be just fine. Hope you enjoy!!

 

Faye O’Rourke

1 oz. White Rum

1/2 oz. Peach Schnapps

1/2 oz. Coffee Liqueur

1/2 oz. Raspberry Liqueur

Orange Juice

 

Method: In a mixing glass filled with ice, add the first four ingredients to measure. Top off with orange juice. Cap off with a tin and shake well. Strain into a highball glass filled with ice. Garnish with an orange and lime wedge on the rim of the glass.
