How to Make a Traditional Egg Nog for the Holidays the “Safe” Way

Egg Nog is a drink with various stories of origin. However, there are probably various stories that have brought us to today’s version of this Holiday Tradition. It is known that some versions of the drink have been around since the 17th Century. In England, this drink is commonly known as an Egg Flip. Due to the abundance of milk and cream in the American Colonies, this is one tradition that had no trouble taking hold here in the United States. It has become a tradition for many families during this time of year.

For me, it lets me know that I have all my Christmas shopping and other preparations done, when I sit back and listen to some Christmas music and sip on some of the egg nog I made the night before to help me have a good night’s sleep.

The one thing that people worry about when drinking egg nog is the fear of drinking uncooked eggs. I’m going to introduce you to a recipe that will make this drink safe for those who have this fear. This is a very easy drink to make if you’re willing to put the time in to make it. You will be happy with the results. This recipe serves up to eight people.

Egg Nog12-24 egg nog

4 Cups Milk

4 Cups Light Cream

1 1/2 Cups Sugar

1 Tsp Cinnamon

2 1/2 Tsp. Vanilla Extract

1/2 Tsp. Nutmeg

5 Cloves

12 Egg Yolks

2 1/2 cups - 3 cups of cognac or spiced rum (optional)

 

Method: First you want to build on the base of what will be your final product. You start by heating up 4 cups of milk, 1/2 tsp of vanilla extract, five cloves, and 1 tsp of cinnamon on the stove at the lowest heat for about five minutes, making sure you get it hot enough without boiling.

While you have this cooking on the stove put the egg yolks and sugar in a mixing bowl and mix it until you have a fluffy mixture of the two.

Pour what you have heated with the combination you just put together and mix well. Put this on the stove and get it to reach a temperature of 160F without boiling on the lowest setting on the stove. Be sure to keep stirring this.

Once you have this at temperature, pour the mixture into a mixing bowl and add the nutmeg, cream, 2 tsp of vanilla extract (remember you’ve already measured 1/2 tsp on the first step).

Seal this and put it in your refridgerator over night for the best results. Wait until you’re about to serve to add the liquor, if you’re going to add any at all.
