Jamaica Me Crazy is February 8th Drink of the Day!!

Coffee liqueur and rum are a great combination that you can count on being a hit at any party. Adding a little tropical juice only brings out the attributes of both. This cocktail is a great example of this. Pineapple juice is a great addition that will entice the spirit of both the amber rum and the Tia Maria I use for this Drink of the Day.

As I sit here with it close to sub-freezing temperatures outside, it’s nice to dream about the tropical beach and the much warmer weather. For now, I will have to have a tropical drink to forget about the reality and close my eyes and enjoy the tropics in my dreams. So, here’s to hotter temperatures and barbeque weather.

Jamaica Me Crazy

1 1/2 oz. Amber Rum

3/4 oz. Tia Maria

Pineapple Juice

Method: In a highball glass filled with ice, begin by pouring in the measured amounts of the first two ingredients. Top off with pineapple juice. Stir and serve.
