Parisian Pousse Cafe is January 23rd Drink of the Day!
When I was putting together today’s blog, I saw that Salvador Dali, one of the best artists of our lifetime, passed in Spain over twenty years ago. I read many stories about Mr. Dali and after reading stories about him being overly flamboyant and all into himself, there was only one type of drink that came to mind - a Pousse Cafe!
A Pousse Cafe is a drink consisting of many layers and is, in itself, a work of art for the bartender who has the time to put one together. It takes the artist of the drink the knowledge of knowing the densities, or specific gravities of each liquor being added to the drink, so they are able to layer the drink without showing much blending of the liquors. You could have three - seven layers in a drink. The way you know you did it right is by physically seeing the layers of the drink that show each ingredient.
Constructing these flawlessly takes a very patient person with a steady hand. Start off with three layers and build from there. Also, check out the “Liquor Density Lists” that can be found everywhere on-line. The higher the density number, the heavier it is. Always check the specific gravities and not quess. You’ll save yourself a lot of time.

Parisian Pousse Cafe
3/4 oz. Orange Curacao
3/4 oz. Cherry Brandy
3/4 oz. Cognac
3/4 oz. Green Chartreuse
Method: Take a sherry glass and begin by pouring the first ingredient, the orange curacao in. Make sure to add each of the next ingredients in order of what’s showing above. After pouring the first ingredient in, take a teaspoon and turn it upside down, so you’re looking down at the back curved end of the spoon. Take the next ingredient and pour over the spoon and slowly disperse the liquor on the previously poured ingredient. Repeat until all ingredients are in the serving glass.
Note: This will be a long process until you get the hang of it. Well worth the time if you have it.
