The Robert Burns is March 30th Drink of the Day!!
I love these old classic cocktails because, in most cases, there is a story to go along with them. In regards to this cocktail, it has to do with the name of it.
Most people associate the name of this cocktail to the Scottish famed poet, Robert Burns, of the 1700s. However, in the Old Waldorf -Astoria Bar Book (1935), author Robert Stevens Crockett mentions the cocktail being named after a cigar salesman who would frequent the bar and enjoy a few of these on occasion. Also called a Bobby Burns, this is a great relaxer and sipper to help warm your insides on a cold evening in front of the fire.
The original recipe called for Absinthe, but has been enjoyed in the last several decades using Pernod, a substitute that was used in place of this ingredient due to the unavailability of it in the United States until just recently. Though I do have Absinthe available now, I felt it just to introduce it this way. However, either way will work out fine. Just be careful not to put too much in due to it taking over the overall flavor. Remember, you only want to enhance the base liquor, not override it.

Robert Burns
2 oz. Scotch Whisky
3/4 oz. Sweet Vermouth
Splash Pernod
2 Dashes of Orange Bitters
Method: In a mixing glass with ice, pour in all the ingredients to measure. Stir to blend the ingredients with a bar spoon. Strain into a chilled cocktail glass. To enhance the orange in the cocktail, take an orange rind and twist it over the glass and rub it on the rim. Discard the rind after doing so.
