Here’s another rum cocktail, this time using maraschino liqueur to give it a nice essence. A great tropical enhanced beverage that will have everyone wanting seconds. Another attribute is the glass that is called for when drinking this cocktail - a cocktail glass. We will be serving this chilled and strained, or “up”. This way, you are not losing any of the flavor of the cocktail by it getting watered down in ice. As you will soon see, this isn’t going to mask the rum at all, but enhance it by adding flavor to it. The other ingredients are added just enough to complement, not override. Just like the cocktail we made yesterday using the rye whiskey, we wanted to bring out the finer qualities of the rum by hiding the liquor flavor and bringing out the other natural flavors that come with it. That’s why we chose this cocktail as the Drink of the Day.
Some rums, just like any other spirit variety, are meant to be enjoyed on the rocks, alone. However, there are many good mixing rums that are meant to be mixed with other ingredients. White rum is meant to be mixed with something. It is not of the quality to stand alone. However, with the right combination of ingredients, you can have a fine drink that can become one of your go-tos in the summertime, or anytime for that matter.

Tahiti Club Cocktail
2 oz. White Rum
1/4 oz. Maraschino Liqueur
1/2 oz. Pineapple Juice
1 Tbsp. Fresh Lime Juice
Juice of 1/2 Lemon
Method: In a mixing glass with ice, pour in the first four ingredients to measure. Squeeze in the juice from half a lemon, discarding the lemon after doing so. Shake well, then strain into a chilled cocktail glass. Place a half-wheel of lemon on the rim of the glass for garnish.
