Not to beat a dead horse, (no pun intended), and talk more about the Belmont Stakes, but I felt the story wouldn’t be complete without introducing the drink that’s been a tradition since 1997. Dale DeGroff, the then head bartender of Manhatten’s Rainbow Room which was part of the Windows of the World Restaurant at the World Trade Center, was asked to introduce a new traditional drink to replace the White Carnation. This was part of many changes the decision makers wanted to make to modernize themselves, so they could attract a younger, more diverse crowd.

The Baymont Breeze was introduced for the 1998 race. The combination of the whiskey, sherry and fruits give it a unique and exciting flavor that will entice every taste bud. Also, a great evening cocktail to get away from the norm and fairly easy to put together.

The Belmont Breeze
1 1/2 oz. Blended Whiskey
3/4 oz. Harvey’s Bristol Cream Sherry
1 1/2 oz. Cranberry Juice
1 1/2 oz. Fresh Orange Juice
1/2 oz. Fresh Lemon Juice
1 Tsp. Sugar
Splash Lemon Lime Soda
Splash Club Soda
Garnishes: Lemon Slice, Strawberry, Mint Sprig

Method: Pour all ingredients, except the soda and lemon-lime soda, into a shaker with ice. Shake vigorously, then strain into a high-ball glass with ice. Top off with the club soda and lemon-lime soda. Garnish with lemon slice, strawberry, and mint sprig.
