Here’s a drink for you that is more complicated than most I show you one here for the Drink of the Day. But, when you are able to successfully make it, this cocktail will satisfy you more than most. This mixed drink dates back to pre-prohibition, back in the day where it was common to have raw egg as part of the recipe to a drink. This ingredient is great in a recipe due to what it does to a drink. The flavor or the ingredients stays the same without it, so if you feel uncomfortable using this as part of the recipe, have at it. But, you will be missing the velvety feel that the egg brings to this concoction. If you do use an egg, be sure it is a pasteurized one.

When I find recipes for this daily post, I like to give you a variety of options when selecting a drink for your home consumption. This variety of drink is sometimes called a mash because you are muddling flavor, in this case raspberry and sugar, in with the other ingredients. You will be pleasantly surprised with the aroma and feel this cocktail has to offer. I hope you enjoy it as much as I do. Cheers!

Blushing Co-Ed

7 Raspberries (four for the drink, three to use as a garnish)

2 Tsp. Granulated Sugar (if you want to use simple syrup, go with 1/2 oz.)

1 1/2 oz. Gin

1 oz. Applejack

1 Raw Egg (optional)

Juice from one Lemon

Method: In a mixing glass with ice, drop in four raspberries and sugar. Muddle until the two ingredients are blended well. Add the gin, applejack, and raw egg, (optional). Cap off with a tin and do a dry shake, (without ice), for about ten - fifteen seconds. This will allow the egg to infiltrate the other ingredients and gives you a nice and foamy beverage. Uncap, add ice, then shake a few more times to give it a chill. Uncap, squeeze in the juice of one lemon, cap and shake again for a few seconds. Strain into a cocktail glass. Add three raspberries for garnish.
