The Chi Chi Cocktail is July 7th Drink of the Day!!

It was a bitter day for Native Hawaiians on this day in 1898 when President William McKinley signed the Newlands Resolution, annexing Hawaii as a territory of the United States. The royal family of the islands was overthrown five years earlier and due to debt and scandals caused, the islands were more or less backed into a corner. In fact, in 1993, 100 years after the fall of the Kingdom of Hawaii, President Bill Clinton signed the Apology Resolution to recognize this and to see that Native Hawaiians got the rights they deserved.

There are some good things that came about due to Hawaii becoming a state in 1959. Native Hawaiians saw this as a time to bring thier culture back after years of neglect and the 1960s were considered the Hawaiian Renaissance where traditional ways and culture were brought back to the forefront.

In recognition of this day in history, I’m introducing a drink that’s a staple in many Waikiki bars. With the main ingredient being Hawaii’s own, pineapple, this drink deserves the title of “Drink of the Day”.

The Chi Chi Cocktail
1 1/2 oz. Tequila
3/4 oz. Orange Liqueur
Juice from a wedge of Lemon
4 oz. Fresh Pineapple Juice
2 Tsp. Grenadine

Method: Pour all contents, except the grenadine into a shaker with ice. Shake well, then strain into a margarita or daiquiri glass filled with crushed ice. Take the grenadine and slowly pour it on top of the drink, causing the grenadine to slowly find its way to the bottom of the cocktail, causing runs of red in the cocktail. Garnish with a pineapple wedge and Maraschino cherry speared together (flag).
