Happy Groundhog Day!
Have you ever wondered how Groundhog Day came about? I can tell you that the official U.S. version of this holiday happened at Gobbler’s Knob in Punxsutawney, PA in 1887. It was the first year Punxsutawney Phil officially started his service as the “seer of all seers…” to predict the coming of Spring. As you know, if he sees his shadow, expect to have another six weeks of winter. However, from what I’ve heard, Phil predicts correctly only 39% of the time.
An holiday in Celtic heritage, named “Imbolc” is where this holiday got its origin. However, in those times, it was noticing the serpents and woodchucks coming out of their winter slumber that signified Spring’s presence.
The latter Christians looked at February 2nd as the end of Christmastide, which was forty days after December 25, Christmas.

2 oz. Bourbon Whiskey
1 oz. White Creme de Cacao
1 oz. Patron XO Cafe
1 oz. Strong Coffee
Method: Pour contents into a shaker filled with ice. Shake well and strain into a cocktail glass.
