The Queen Cocktail is June 2nd Drink of the Day!!
There will be much celebration today in England, with Queen Elizabeth II celebrating sixty years on the throne today. The Diamond Jubilee is going to be an event we will not see again in our lifetimes. Kind of wish I could be there today for the festivities. It will be a celebration that includes an orchestra on the river, which is a first. Plus, you can expect many fireworks and side-celebrations will be happening throughout the area.
Of course, when you have celebration you have cocktails! To join in the celebration today, the Fairmont Empress Hotel in Victoria, British Columbia came up with a simple, yet delicious drink that can be enjoyed through the summer. If you like the Tom Collins, you’ll get a little more flavor with this one.

The Queen Cocktail
1 1/2 oz. Rose Petal Infused Victoria Gin
3/4 oz. Fresh Lemon
1/2 oz. Simple Syrup
Splash Soda Water
Method: Pour all contents, except soda water, into a shaker with ice. Shake vigorously for ten seconds. Strain into a cocktail glass then top with a splash of soda water. Garnish with a lemon wheel.
