Here’s a cocktail that I was going to wait until at least the end of November to unveil. However, due to the temperatures feeling more like January instead of April, I felt it just to share it today.
One nice thing about the Winter Wonderland is that all the ingredients used to put this together are tropical on their own merits. The one thing that gives the look of winter is the shaved coconut that you will float on the drink as a garnish. As you will see below, I originally thought that the shavings on the rim of the glass would look good. Using Karo Syrup to help it stick to the rim tends to get messy and makes this beverage uncomfortable to drink. So, floating on the beverage itself wins out!
If you are in the MidWest, such as myself, you are feeling the cold and brisk winds this day. Why not slip into something a little warm and make yourself a couple of these. Enjoy!
1 1/2 oz. Malibu Rum
3/4 oz. Blue Curacao
Splash of fresh lime juice (optional…tends to bring the sweetness down somewhat. Just don’t overdo this ingredient)
2 1/2 oz. Pineapple Juice
Method: Pour all ingredients to measure in a mixing glass with ice. Cap with a tin and shake well. Strain into a chilled cocktail glass. Top the drink off with a pinch of coconut shavings.
